Taleggio is a cheese whose roots can be traced back to the 10th century AD. Certain documentary traces from the 13th century testify to the marketing of this cheese along with others. The area of origin is Val Taleggio, in the province of Bergamo, from which the cheese derives its name. The inhabitants of this area managed to develop a fervent cattle-breeding activity, which produced more milk than was needed to meet the immediate needs of the local population. In order not to waste the excess milk, they began to produce this exquisite cheese, which, once aged in local caves or on farms located downstream, could be bartered for other products. As a result of the growing demand for this distinctive cheese, its production spread to the Po Valley. As a result of this, many small and medium-sized dairies began to produce Taleggio, reconciling in their activity the traditional methods of artisanal producers with technological innovations: a progress achieved thanks to a millennial history.
