Gorgonzola is a straw-white raw cheese, whose green streaks are due to the marbling process, i.e. the formation of mould. Sharp Gorgonzola has a stronger and more pronounced flavour, with a more herbaceous, consistent and crumbly texture than sweet Gorgonzola.
