Gorgonzola is a straw-coloured raw cheese, which has green streaks due to the marbling process, i.e. mould formation. Sharp Gorgonzola has a stronger and more pronounced flavour, with a more herbaceous, consistent and crumbly texture than sweet Gorgonzola.
