Buffalo mozzarella is an Italian spun paste cheese, produced with buffalo milk in selected provinces of Southern Italy.
The city of Aversa, in the province of Caserta, is recognized as the "historical" place of origin of this product, which made its appearance in the middle of the twelfth century. It is a fresh cheese, with a delicate taste, with a typical spherical shape, characterized by a white-porcelain color. Besides being eaten fresh, its characteristics make it a perfect ingredient for traditional Mediterranean recipes such as pizza, pasta and caprese (a delicious combination of tomatoes, basil, olive oil, salt and pepper). Mozzarella di Bufala Campana has obtained the recognition of D.O.P. by the European Union.
